Vegan Bread Toasts with Avocado, Banana or Tomato

Easy to make, great for a quick breakfast, dinner or snack, but let’s be honest – they’re delicious all day long!

AVOCADO TOAST

INGREDIENTS

• 1 slice hearty bread, toasted

• 1 to 2 teaspoons extra virgin olive oil

• 1/4 medium ripe avocado, sliced

• 1/4 -1/2 teaspoon Everything Seasoning (my favorite is Everything but the Bagel Sesame Seasoning Blend)

• Cilantro to taste

DIRECTIONS

Spread toast with half of the olive oil; top with avocado slices, sprinkle cilantro pieces, top with sprinkles of the seasoning to taste, and a drizzle of additional oil. Voila! Enjoy!

BANANA PEANUT BUTTER TOAST

INGREDIENTS

• 1 slice hearty bread, toasted

• 1 to 2 teaspoons peanut butter

• 1/2 ripe banana, sliced

• Blueberries

• Top with crushed peanuts to taste

• Hemp seeds to taste

DIRECTIONS

Spread toast with peanut butter; top with banana slices, top with a few blueberries and sprinkle some peanut pieces and hemps seeds to taste. Voila! Enjoy!

TOMATO VEGAN CREAM CHEESE TOAST

INGREDIENTS

• 1 slice hearty bread, toasted

• 1 to 2 teaspoons vegan cream cheese

• 1/2 cup cherry tomatoes, sliced

• 1/4-1/2 teaspoon Everything Seasoning (my favorite is Everything but the Bagel Sesame Seasoning Blend)

• 1/2 teaspoon olive oil

• 1 teaspoon pumpkin seeds

DIRECTIONS

Spread toast with vegan cream cheese; top with cherry tomatoes, olive oil and pumpkin seeds and Everything Seasoning to taste. Voila! Enjoy!
