This crisp nutrient-rich Mediterranean Salad makes a great
accompaniment to any main dish, or can be the main dish. Either way it’s
sure to please.
SALAD INGREDIENTS
• 1 cup cooked chickpeas
• 1 1/2 cup sliced peeled cucumber
• 1/4 cup diced red pepper
• 1/2 cup cherry tomatoes
• 1/8 cup sliced red onion
• 1/2 - 3/4 cup chopped fresh parsley
• 1/8 cup Kalamata olives halved
DRESSING INGREDIENTS
• 1/2 to 1 lemon juiced
• 1-2 cloves garlic minced
• Cayenne to taste
• 1/4 teaspoon salt
• 1/4 teaspoon pepper
• 1/8 cup olive oil or less
OPTIONAL TOPPING
• Vegan Feta Cheese crumbled (optional)
• Sunflower sprouts
PREPARATION STEPS
In a large salad bowl, combine the first seven ingredients. In a small bowl, whisk the dressing ingredients. Drizzle over salad and toss to coat.
