SOUP INGREDIENTS
• 6 cups organic carrot juice
• 2 small ripe avocados
• 2/3 cup Thai coconut meat thawed
• 1/2 cup lime juice
• 4 tablespoon coconut nectar
• 2 tablespoon minced ginger
• 1/8 - 1/4 teaspoon cayenne
• 1/2 teaspoon sea salt
• 4 tablespoons avocado lime oil garnish as drizzle on top (optional)
• A few sprigs cilantro on each serving (to make this recipe it takes about 6 pounds of carrots)
PREPARATION STEPS
• Make carrot juice.
• Blend all ingredients (except avocado lime oil and cilantro) together in a high-speed blender till smooth.
• Divide among serving bowls.
• Garnish with avocado lime oil on top and a few cilantro leaves in the middle (optional).
